李家涼麵
【材料】:生涼麵1斤、小黃瓜2條、芝麻醬1瓶、大蒜5粒、醋2匙、醬油2匙、麻油2匙、辣油1匙、糖1匙、鹽1/2匙
【做法】:
1、小黃瓜切斜片後,切絲備用。
2、麵條放入滾水中,再加入一碗冷水,蓋上鍋蓋煮熟。
3、把煮熟的麵條加入麻油,拌勻吹涼。
4、芝麻醬加入水調稀後,再加入鹽備用。
5、大蒜切末後,加入鹽、水,即完成大蒜水。
6、醬油倒入開水拌勻,糖加入水拌勻,醋加入水,烏醋加水後備用。
7、把靜置過後的芝麻醬加入香油、水拌勻,即完成芝麻醬汁。
8、把涼麵淋上芝麻醬、糖水、蒜水、醬油、白醋、烏醋、辣油,擺上小黃瓜即可。
9、【皮蛋醬】做法:皮蛋放入調理機中,加入醬油膏、水、香油後攪拌均勻,即完成皮蛋醬汁。

祖傳酢醬麵
【材料】:麵條2斤、絞肉1斤、洋蔥1個、蛋5個、豆芽1斤、菠菜1斤、大蒜8粒、甜麵醬2大匙、醬油1大匙、糖1大匙、胡椒粉1/2小匙
【做法】:
1、乾鍋燒熱後把絞肉放入乾炒,炒熟後備用。
2、小黃瓜去頭尾後,斜刀切片再切絲備用。
3、另起一鍋加少許油,先把洋蔥放入炒香後再加入剛炒熟的絞肉,接著放入甜麵醬下去拌炒均勻,再把鹽、糖、醬油放入轉小火等湯汁慢慢收乾後即可盛盤。
4、蛋加入鹽後打散,放入鍋中炒成蛋絲後起鍋備用。
5、另起一鍋放入少許油,再將豆芽菜放入鍋中,再加鹽和水調味拌炒後起鍋備用。
6、起鍋熱油後放入蝦仁、紹興酒炒勻,接著再把韭黃放入鍋中拌勻;再加鹽調味即可起鍋備用。
7、蒜頭剁碎加入鹽和開水即為大蒜水後備用。
8、起一鍋滾水,把麵放入鍋中煮熟後,再把麵放入冷水中稍稍浸泡。
9、準備一個盤子,依序放入麵條、豆芽菜、蛋絲、小黃瓜、韭黃蝦仁、最後再淋上酢醬以及大蒜水;撒上香菜即完成這道好吃的『祖傳酢醬麵』。
